How do you make Suffolk Meadow Ice Cream? We collect or have the milk delivered from Beccles to our purpose built ice creamery in Walpole. There it is carefully heat treated and pasteurised along with double cream, sugar and a few other important ingredients. Once it has reached the desired temperature we chill it and just let it develop. The ice cream mix or 'base mix' as we call it, remains chilled throughout the remainder of the ice cream making process. The next morning our ice cream development team get to work on creating those delicious flavours, using the mixture in small batches and adding the flavours and inclusions depending on that days production schedule. The ice cream is churned and frozen slightly before being potted and placed into our walk in blast chiller. It is a long but very worthwhile process.

What is an Ice Cream Cake and how do I get one?So you may have seen some of our pictures of ice cream cakes. An ice cream cake is literally ice cream in the shape of a cake - well maybe a little more than that! So we create our bespoke, made to order, ice cream cakes by layering 2 separate flavours of ice cream. Between the 2 layers we add a layer of homemade meringue and a sauce or inclusion to compliment the choices of ice cream flavour. Once frozen we turn out onto a cake board and apply a luscious layer of Semifreddo. We can then decorate to suit your theme or wishes. Please bear in mind that working with an ice cream cake in the decorating stages is not like working with a baked cake and so we are a little more limited on the design stage. I think our favourites to date have been the Unicorn and our Grandmother's 100th birthday cake. We need at least 2 weeks notice for cakes. These cakes have to be delivered by us, therefore you must be within 30 miles of our creamery at Walpole. So if you are interested please let us know by Contacting Us.
